Aleppo Pepper Citrus & Olive Oil Cake

This loaf-style cake brings together bright citrus flavors and the mild, fruity warmth of Aleppo pepper. Olive oil lends moisture and richness, while a sprinkling of pepper on the buttery crumb brings a surprising yet harmonious layer of flavor.

Ingredients

  • 1½ cups flour
  • 1 tsp baking powder
  • Zest of 1 orange and 1 lemon
  • ¾ cup olive oil
  • ¾ cup sugar
  • 2 eggs
  • ½ tsp Aleppo pepper (plus pinch to top)
  • ½ cup milk

Instructions

1.Preheat the Oven
Preheat oven to 350°F (175°C). Grease a standard loaf pan and set aside.

2.Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, citrus zest (orange or lemon), and Aleppo pepper.

3.Prepare the Wet Ingredients
In a separate large bowl, beat together the oil, sugar, and eggs until pale and slightly thickened. Stir in the milk until fully combined.

4.Combine and Transfer to Pan
Gradually add the dry mixture to the wet ingredients, stirring until just combined. Pour the batter into the prepared loaf pan and sprinkle a pinch of Aleppo pepper on top.

5.Bake and Cool
Bake for 40 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then remove and transfer to a wire rack to cool completely.

 Serving Suggestions:

Enjoy with tea, a dollop of ricotta or crema, or slices of fresh fruit.
