7 Spice Pumpkin Lentil Soup
Comforting and nutritious, this pumpkin lentil soup is anything but bland thanks to the inclusion of 7 spice. The warm aromatic profile enhances the sweetness of pumpkin while the lentils provide hearty body and texture.
Ingredients
- 1 cup red lentils
- 1 cup pumpkin puree
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp 7 spice
- ½ tsp cumin
- 4 cups vegetable broth
- 1 tbsp olive oil
- Salt, to taste
Instructions
- Sauté the Aromatics
In a pot, heat olive oil and sauté onion and garlic until soft.
- Simmer the Soup
Add lentils, pumpkin, spices, and broth. Bring to boil, then reduce heat and simmer 25–30 minutes.
- Blend (Optional)
Blend partially for a creamy texture or leave chunky.
- Serve
Season with salt and garnish with a swirl of olive oil or chopped herbs.
