Intro

These Zaatar Roasted Chickpeas are the perfect crunchy snack—savory, satisfying, and packed with flavor. The blend of zaatar and olive oil creates an irresistible coating, and the slow roast ensures every bite is crisp. They’re also great tossed into salads or served as a mezze snack.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 2–3 tsp zaatar
  • Salt, to taste

Instructions

  • Preheat Oven
    Preheat oven to 400°F (200°C).
  • Dry the Chickpeas
    Pat chickpeas very dry using a clean kitchen towel or paper towels. This helps them crisp.
  • Season
    In a bowl, toss the chickpeas with olive oil, zaatar, and salt.
  • Roast
    Spread chickpeas in a single layer on a parchment-lined baking sheet. Roast for 30–40 minutes, shaking the tray halfway through.
  • Cool and Serve
    Let cool slightly before serving. They’ll continue to crisp as they cool.
